My grandmother, Anne Feeney, who was from Roosky, C. Roscommon (she married Frank Tiernan of Cloone, Co. Lietrim, used to make boxty at Christmas. It was always a special treat for us. Her variety of boxty was the boiled kind or boxty dumplings that were then slices down and heated in bacon fat. All of the recipes that I find for boxty are the pancake type or boxty bread. Does ayone have a recipe for the dumplings?
